More information
Crumbly, fragrant, and spiced: the HoneySweet Workshop's gingerbread instantly evokes childhood memories, grandma's kitchen – and the festive spirit.
When two paths suddenly meet
Mónika Baráth Adorján and her daughter Bori Adorján ran a family restaurant for many years, where Bori increasingly dedicated her time to creating desserts. The guests' feedback and her love for baking encouraged Bori to attend pastry school, enabling them to work professionally yet still in an artisanal way.
Mónika, however, didn't develop her passion for homemade cakes in the restaurant but at home, delighting her family almost daily with sweet "dough" – as cakes are often referred to in Zala. Her first large-scale cake order came from a hotel in Hévíz, where she was tasked with creating edible Christmas gifts. While baking gingerbread would have been the obvious choice, Mónika and her family decided to go in a completely different direction. They revisited old family recipes and rediscovered a forgotten treat: honey gingerbread.
During the pandemic, when the hospitality industry came to a halt, the success of their homemade gingerbread set them on a new path: the family closed the restaurant and founded the HoneySweet Workshop. Their goal wasn't to run a traditional pastry shop but to create a workshop where they could work at their own pace, follow their own tastes, and make no compromises.
Modern cakes and traditional pastries
In the workshop, everyone has their favourite activity: Bori specialises in modern cakes, tarts, macarons, and bespoke orders, while her mother, Mónika, focuses on traditional pastries – layered cakes, honey cream slices, flódni, or zserbó.
Some of the recipes are old family heirlooms, passed down from great-grandmothers, aunts, grandmothers, or even from the recipe books of Mrs Géza Ábrahám, which they’ve adapted to their own tastes.
Every pastry contains a personal touch, something that makes it unique, homely, and unmistakably HoneySweet.
Honey gingerbread evokes sweet memories
The HoneySweet Workshop's honey gingerbread invites you on a journey through time: it brings back memories of a countryside grandmother's kitchen, and the spicy scent of Christmas evokes the warmth of home. Coated in snowy white icing, these treats captivate not only with their appearance but also with their flavour and texture. As soon as you take a bite, the crumbly dough almost melts in your mouth.
The secret to the HoneySweet Workshop's honey gingerbread lies in their unique spice blend, which includes eight aromatic spices.
Another key ingredient is honey, sourced from a local beekeeper in Gyenesdiás.
The team loves experimenting with their honey gingerbread, so you can occasionally try new flavours. Their latest innovation is made with wholegrain spelt and wheat flour.
This summer's biggest hit in the gingerbread range was the lavender flavour, for which the lavender is grown, harvested, dried, and ground in the workshop's garden before being added to the honey mixture.
Not a pastry shop – but a family creative workshop
The workshop is not a traditional pastry shop. Sweets are made to order and can also be found at the Hévíz Farmers' Market. The personal touch of purchasing is an essential part of the concept – whether it's tasting at the market or a pre-arranged visit.
Product details
Honey gingerbread
The flagship product of the HoneySweet Workshop is honey gingerbread, available in a variety of flavours. The dough is dense yet crumbly; it melts in your mouth as soon as you take a bite. There's no need to wait days for it to soften – this gingerbread is soft from the start. The perfect texture comes from an old recipe: flour, sugar, margarine, eggs, sour cream, and bicarbonate of soda, plus the secret spice blend. This blend is their own creation, containing eight different spices.
Each gingerbread is individually hand-shaped into a round form and placed one by one onto the baking tray. After baking, they are dipped in large bowls of icing and then laid out side by side to dry – every single piece is handmade with care.
The flavour options include both traditional and unique varieties: plain, prune and rum, cranberry, candied orange, ginger (without icing), cocoa and chocolate chip, and seasonally, lavender.
For the lavender gingerbread, the lavender blooms in the workshop's garden every June.
